I don’t know about you but I am always in a hurry in the morning.  I have three kids and myself to ready…and I am always racing out the door, often without breakfast.  So I rely on these handy breakfast bars that I can grab and eat in the car.  They are Paleo and Whole30 friendly and have a lot of healthy fats that keep me feeling full until lunch.

 

Ingredients:

1.5 cups pitted dates

1 cup pecans

1/4 cup chia seeds

1/4 cup flax seeds

1/4 cup hemp hearts

Zest of one orange

1/2 cup coconut butter

6 Tablespoons coconut oil

1/4 cup shredded, unsweetened coconut

 

Place all ingredients except shredded coconut in a food processor and process until well mixed.  Press the mixture into a baking dish and sprinkle shredded coconut evenly over the mixture.  Press the coconut in slightly.  Place the dish in the refrigerator and let cool until hardened.

Cut the bars in to squares and you’ve got breakfast!  I like to make my mornings extra easy by placing the bars in a parchment paper bag…or you could wrap in foil.  Then just leave them in the refrigerator until you are ready to leave in the morning.  There is no danger to leaving these at room temperature for a bit…I just prefer to leave them cold as they start to fall apart at room temperature as the oils soften.
